How to Prepare the Best Fish with This Simple & Quick Recipe
- 6 fillets of fish of your choice
- 3 carrots
- 2-3 potatoes
- 4 oz olives
- 1/2 parsley
- 2 tablespoons of tomato concentrate
- juice of half a lemon
- olive oil
- cumin powder
- freshly ground pepper
- 2 small tomatoes
- 1 dl of water
Preheat the oven to 400 degree fahrenheit.
Cut the potatoes and carrots into thin rings, transfer to a greased baking pan, season with salt, spray with oil and bake for 20 minutes in a preheated oven. During this time, marinate the fish. Mix chopped parsley, lemon juice, tomato concentrate, olive oil, sea salt, cumin powder and freshly ground pepper.
Roll prepared fish fillets into marinade, spread over half-baked vegetables, cover with tomato rings, add olives, add some more oil and water and bake for 25-30 minutes, until all vegetables are softened.
